Palm Sugar: Included in your Red Kit (use all)
Protein / Veggies (Optional): 200g sliced chicken breast or prawns, plus a handful of mushrooms.
Fresh Lime Juice: 2 tablespoons
Cilantro: Fresh leaves for garnish
Coconut Milk (Optional): Included with your Red Kit
Instructions:
Heat 1 tablespoon of neutral oil in your pot over medium-low heat. Add your red curry paste and stir while frying for about 1-2 minutes until the paste becomes fragrant. Stir palm sugar fish sauce into the frying paste and cook for another minute.
Carefully pour the blended water and chicken stock directly over the bloomed paste, stirring to scrape up any bits stuck to the bottom of the pot. Bring the mixture to a low boil, then add the lemongrass, galangal, torn lime leaves, and chilies (omit for a mild curry). Lower the heat, cover, and simmer for 5 to 10 minutes to infuse the fresh herbs.
Add your sliced chicken (or prawns) and mushrooms to the simmering broth. Cook for 3 to 5 minutes until the chicken is thoroughly cooked or the prawns turn pink.
Stir in some of the soy sauce, adding more if you’d like it a bit saltier.
Turn off the heat. Stir in the fresh lime juice. Garnish with fresh coriander leaves and serve hot.
Option: Stir in some of the coconut milk from your red kit to make this a creamy dish.
